One-Pot Creole Lemon Garlic Chicken Pasta
This flavorful, zesty, and slightly spicy pasta dish comes together in just one pan and under 30 minutes!
Ingredients:
2 boneless, skinless chicken breasts (thinly sliced)
8 oz angel hair pasta
2 tbsp olive oil
2 tsp Creole or soul seasoning
3 cloves garlic (minced)
1 ½ cups chicken broth
¼ cup fresh lemon juice
1 tsp lemon zest
½ cup heavy cream (or milk for a lighter option)
2 tbsp butter
½ tsp black pepper
½ tsp crushed red pepper flakes (optional)
¼ cup grated Parmesan (optional, for garnish)
Fresh parsley (chopped, for garnish)
Instructions:
Heat 1 tbsp olive oil in a large deep skillet or pot over medium-high heat. Season the sliced chicken with Creole seasoning and sear for 3-4 minutes per side until golden brown. Remove and set aside.
In the same pot, add the remaining 1 tbsp olive oil and minced garlic. Sauté for 30 seconds until fragrant.
Pour in the chicken broth, lemon juice, and lemon zest. Bring to a boil, then add the angel hair pasta. Stir occasionally, cooking for about 4 minutes until the pasta softens.
Lower the heat to medium-low. Stir in the butter, heavy cream, black pepper, and crushed red pepper flakes (if using). Let it simmer for 2-3 minutes.
Return the cooked chicken to the pot and toss everything together. Let it heat through for 1-2 minutes.
Garnish with Parmesan and fresh parsley. Serve immediately!
Tip: For a little extra heat, add a dash of hot sauce or more Creole seasoning!
