Garlic Butter Cajun Shrimp Bowl

Ingredients:

For the Shrimp:

  • 1 lb large shrimp, peeled and deveined

  • 2 tbsp olive oil

  • 3 tbsp unsalted butter

  • 3 garlic cloves, minced

  • 1 tbsp Cajun seasoning (adjust to taste)

  • 1 tbsp fresh lemon juice

  • 2 tbsp chopped fresh parsley (optional for garnish)

For the Base:

  • 2 cups cooked white or brown rice (or cauliflower rice for a lighter option)

  • 1 cup bell peppers (red, green, or yellow), thinly sliced - not necessary but they add a bit of extra color

  • 1 cup broccoli florets or your favorite vegetable(s)

Instructions:


Pat the shrimp dry with a paper towel. In a bowl, toss them with Cajun seasoning until well coated.


Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the bell peppers and broccoli, season lightly with salt and pepper, and sauté for 4-5 minutes until tender but still crisp. Remove from the skillet and set aside.


In the same skillet, add the remaining tablespoon of olive oil. Place the shrimp in a single layer and cook for 2-3 minutes on each side until pink and opaque. Remove the shrimp and set aside.


Reduce the heat to medium. Add the butter and garlic to the skillet, sautéeing until fragrant (about 1 minute). Stir in the lemon juice, then return the shrimp to the skillet. Toss to coat the shrimp in the buttery sauce.


Divide the cooked rice into four bowls. Top with the sautéed vegetables and Cajun shrimp. Sprinkle with fresh parsley and an extra squeeze of lemon if desired. Serve immediately.
